Using Chai Garam Chai Spice Blend with our LXV Duck Breast Recipe
“Chai Garam Chai” is the clarion call of not only the tea vendors in the trains of India, but also it is a culinary one – the fragrant gentle spice blend has the potential to be a poaching medium. A rub, to sprinkle, or to bring life to a relatively bland dish.
A mix of Whole Milk Powder, Black Tea, Tulsi (Holy Basil) leaves, Black and Green Cardamom, Star Anise, Rose Petals, Cloves, Black Pepper, Fennel, & Other Spices.
Pairing LXV’s 2020 the Secret with LXV’s Chai Spice Blend
Matching: The cardamom has floral notes that match with the beautiful floral bouquet of the wine.
Complementing: The umami notes of the black vanilla powder complement the umami notes of the wine. The vanilla powder smoothes the wine out a little more.
Contrasting: There is a bitterness of the tea leaves that brings out the fruitiness of the wine. By contrasting the fruit with the bitterness, the Secret appears even more fruit forward than on its own!
