LXV WINEMAKING - Direct Press

A "direct press" Sangiovese-Rose, done in traditional Provence Style, delivering a wine full of fruit and zest, just in time for the warm weather.

The fruit comes off the vines early, with the singular intention of making a premium Rose. Red grapes at lower Brix show a lot of differentiation in flavor and aroma.

The old world regions of Tavel, Bandol, Provence(where rose is taken a bit more seriously) also utilize the direct press method, helping retain much more phenolics and structure than the bleed (saignée)method.

LXV WINEMAKING - A different expression for the ubiquitous GSM

'GSM' is a red blend made from Grenache, Syrah and Mourvèdre and it's a classic from the Côtes du Rhône region in France. However, the Mourvèdre is typically from "old vines", since young vines often produce fruit with an aggressively tannic edge and bubble-gum resonant fruit.

Paso Robles being a young viticulture area, we substituted Mourvèdre with Tempranillo, since Tempranillo provides the framework and ageing ability, along with the mature flavours like figs, plums, black cherry and cassis.

LXV WINEMAKING - Ode to the Old World

In Paso Robles Wine Country, temperate days, cool nights and well-drained soil echo the growing conditions of Bordeaux, France. Today, Cabernet Sauvignon — with its rich mouth feel, deep complexity and velvety finish — reigns supreme among Paso's Bordeaux bounty.

This is a soft, youthful Cabernet with just the right amount of oak influence, combining old world charm and food-friendliness with ripe Paso flavor.
